I make these cakes both for the holiday table and for the family tea party! Cooking is very easy, with ingredients that are always in the fridge. It turns out tender, soft and incredibly delicious.

How to cook:
In a bowl put soft butter or margarine, add granulated sugar, salt and mix with a spatula.
Add the eggs and mix.
Add lemon zest and mix.
Pour in the vegetable oil and mix.
Gradually add the flour and baking powder, and mix.
Roll the dough into balls and place them on a baking tray lined with parchment. Bake for 15-20 minutes at 120 degrees.
Melt the dark chocolate and dip the tops of the cookies.
Sprinkle the chocolate on top as desired and garnish with chopped pistachios.
