When preparing salmon, I always know it will be quick and surely delicious. Since salmon needs only a few minutes in a skillet or 12-15 minutes in the oven, preparing salmon for dinner is a pleasure. And I hope I didn’t surprise you by such a short salmon cooking time. After all, salmon can be overcooked very quickly, and then nothing good comes out from that – you will have a dry piece of fish in front of your nose. For this reason, I always emphasize in my recipes that you need to keep a close eye on the cooking time for salmon (after all, no one wants to eat an overdone fish…).
So, my dear ones, with this “don’t overcook salmon” monologue I present a gourmet (or close to it), super delicious salmon in a creamy sauce with spinach and mascarpone cheese. You can guess from the ingredients alone that it will be fantastic. nyway, in my opinion, a dish made with mascarpone cheese just can’t be tasteless. Mascarpone is such a heavenly, mild-like fluffy cheese that can turn a simple dish into a real masterpiece.
You can serve salmon prepared in this way with rice, fried potatoes, mashed potatoes, pasta, stewed vegetables or just a salad. As you can see, any side dish you choose will work beautifully. I enjoyed my salmon with rice and a simple salad.

Ingredients:
450 g (1 lb) salmon fillet with skin
150 g (5 oz) baby spinach
100 g (3.5 oz) mascarpone cheese
1 lemon
2 garlic cloves
2 tbsp. milk
salt, black pepper
Preparation:
- Preheat the oven to 180 C (350 F).
- Cut salmon fillet into 3 pieces, sprinkle with salt and pepper.
- Peel garlic cloves and slice them.
- Preheat a little bit of olive oil over medium high heat. Add salmon and fry for 1 minute, then turn over and fry for another minute. Transfer salmon on a plate and set aside.
- In the same skillet preheat a little bit of oil over a lower heat. Add garlic and sauté, stirring constantly for about 30 seconds.
- Then add spinach, squeeze half of a lemon, season with salt and pepper. Add mascarpone cheese, pour in milk and mix. Sauté until spinach is soft. Transfer sauce into an oven proof dish.
- Slice the remaining lemon. Place lemon slices over the sauce and add salmon pieces. Bake in a preheated oven for ~6-8 minutes, until salmon is cooked (just do not overbake!). Serve with rice, potatoes or other vegetables. Enjoy!
