Pike (fish) cutlet with vegetables

How many times you were holding fish in your hands and though what you can make from it? I was in such situation for a million times. Yet for now I have my own fish cutlets recipe. I always make it from pike fillet, but I guess that they will still be delicious from any fish.

  • 500 grams of baked pike fillet
  • 1 onion
  • 2 boiled eggs
  • 1 egg
  • 1 slice of bread
  • pinch of black peppers
  • pinch of salt 
  • oil (for baking)
  • flour (for rolling)

For garnish:

  • 2 carrots
  • 1 onion
  • 3 tablespoons of tomato sauce
  • pinch of salt
  • pinch of black peppers
  • sugar
  • greens (drill, parsley, etc.)
  • oil

Recipe Directions

1. At first you have to mince together pike fillet, peeled onion, boiled eggs and slice of bread.

2. Add pinch of salt and black peppers, also add egg and knead it.

3. Preheat oil in a pan. Take mixture and form cutlets, then wrap them in flours and place in a pan.

4. Bake for about 2 to 4 minutes on each side until the cutlets gets browned.

5. Garnish: Preheat oil in a pan.

6. Chop an onion into cubes.

7. Grate carrots.

8. Add chopped onion in to pan and fry for a minute.

9. Add grated carrots in a pan and stir a bit. Cover pan with a lid and bake it over low temperature until vegetables gets soften.

10. Add tomato sauce, salt, pepper and sugar (to taste). Cook it for few minutes.

11. Serve the garnish with fried pike cutlets. On top, we sprinkle with shredded greens. Let's taste it!
